1 medium-size cucumber
1 tablespoon vegan butter
1/4 teaspoon low sodium sea salt
Chopped fresh dill, basil, or parsley to taste
Wash hands with soap and warm water for 20 seconds. Peel cucumber, and cut into large chunks. In a skillet, melt butter over medium heat. Add cucumber and salt, and cook, tossing occasionally, until tender, about 5 minutes. | To serve: Sprinkled with chopped dill, basil, or parsley. Serves 4.
