Sautéed Cucumbers

1 medium-size cucumber
1 tablespoon vegan butter
1/4 teaspoon low sodium sea salt
Chopped fresh dill, basil, or parsley to taste

Wash your hands with clean, running water (warm or cold) for at least 20 seconds, rinse and dry.  https://www.cdc.gov/handwashing/faqs.html

Peel cucumber, and cut into large chunks. In a skillet, melt butter over medium heat. Add cucumber and salt, and cook, tossing occasionally, until tender, about 5 minutes. | To serve: Sprinkled with chopped dill, basil, or parsley. Serves 4.
